Since Alain Ducasse from the Louis XV in Monaco sent me to London to work in Monte’s, a Private Club situated at 164 Sloane Street, SW1, I have expanded my knowledge in all different areas of cuisine.
From catering for private parties in residential households for H.R.H. Prince of Wales, Sir Elton John, and many A-listers, as well as freelancing in well-known outside catering companies; with great passion, I naturally directed my services to permanent employment in private households.
Immediately, I was employed by and for Lord Andrew Lloyd Webber, as his personal Chef, creating and presenting menus every week, in a very close relationship. I understood and exceeded the high expectations of my employer and his internationally renowned guests.
Following this amazing position, Chancery-St-James Plc employed me to set up the company's private dining and banqueting areas. I have designed all production sections, hired staff and set up the dining rooms that could contain up to 50 people seated and more than one hundred standing at any given time.
As the executive chef, I was responsible for the board of directors’ lunches, cooking with only the very best and freshest of ingredients, as well as catering for seminars and conferences. I was also the CEO's Personal Chef, preparing exquisite dinners at the London residence and weekends at the countryside mansion in Leicestershire.
Additionally, I created original canapés for the Red Cross bi-monthly charity events, where the top of society would be present.
From 2003 to 2007, I compiled international menus and faced the challenge of serving Michelin-style meals at
35,000 feet in the air. I succeeded in doing so and helped the Skytrack Airline Excellence Awards award Gulf Air World Best Onboard Food for three consecutive years: 2004, 2005 and 2006. With an extensive wine list, I was also able to pair amazing wines with the usual nine-course meal.
Travelling to various countries, especially the Far East, has helped me to catch the true essence of Asian cuisine and broaden extensively my repertoire with healthy, fresh recipes that are packed with amazing flavours.
Working for members of the royal family of Qatar in New York, Doha and South of France has allowed me to elevate my repertoire to new heights and ensure impeccable services for diplomatic dinners and cocktail parties.
As Culinary & Nutrition Executive Chef, I had to quickly adapt and provide unparalleled quality food no matter
the location, creating menus and recipes using the very best of local ingredients money can buy. Additionally, I was in charge of the principals’ nutrition and special dietary requirements and every guest.
In addition to my culinary experience, I am a registered Naturopath and Nutritional Therapist; also certified in sports & exercise nutrition.
By keeping up to date with new diets, I can deliver menus that exceed the highest of expectations. My selection of cuisine varies from classic French to high-end Japanese, traditional Thai to healthy Mediterranean. I also specialise in true paleo and keto diets, calorie-controlled and free-from diets, as well as vegetarian/vegan.
