Achieve Hospitality is excited to be partnering with a prestigious luxury country house hotel in Aberdeenshire to recruit a Sous Chef. Set within beautiful Scottish countryside, this renowned property offers exceptional hospitality, destination dining, championship golf and a thriving weddings and events business. Working alongside an award-winning Executive Chef, you’ll play a key role in a growing kitchen brigade as the team works towards achieving AA Rosette standard, making this an excellent opportunity to develop your career in a quality-driven environment.
Role & Responsibilities
- Support the Executive Chef with the day-to-day management of all kitchen operations.
- Prepare, cook and present high-quality dishes across restaurant, banqueting and event services.
- Assist in creating seasonal menus using fresh, locally sourced Scottish produce.
- Lead, motivate and mentor junior chefs, ensuring consistent standards throughout service.
- Monitor stock levels, place orders and control food costs to minimise waste.
- Ensure full compliance with HACCP, COSHH, food hygiene and Health & Safety regulations.
- Work closely with the management team to maintain exceptional guest dining experiences.
- Identify opportunities to improve kitchen operations, efficiency and overall food quality.
Candidate Requirements
- Previous experience as a Sous Chef within a quality hotel or restaurant.
- Confident leading a busy kitchen brigade in a fast-paced service environment.
- Experience within an AA Rosette or Michelin kitchen is desirable, not essential.
- Strong knowledge of fresh, seasonal produce and modern cooking techniques.
- Proven experience with stock control, ordering and food cost management.
- Excellent understanding of HACCP, COSHH and food safety legislation.
- Strong communication skills with the ability to coach and develop junior chefs.
- Passionate, organised and committed to delivering consistently high culinary standards.
