Achieve Hospitality is delighted to be partnering with a prestigious luxury resort, a destination renowned for delivering unforgettable guest experiences through exceptional cuisine, locally sourced ingredients, and a commitment to culinary excellence.
We are seeking a skilled and passionate Sous Chef to join the Castle Kitchens. In this hands-on operational role, you will support the Head Chef in delivering a high-quality, seasonal food offering while mentoring and inspiring a talented kitchen team.
As Sous Chef, you will play a key role in the smooth and successful running of the kitchens. You will assist with day-to-day management, ensure consistent food quality, uphold hygiene and safety standards, and contribute to a creative, seasonal menu that showcases the very best of local produce. Your leadership will be central to fostering a professional, motivated, and high-performing culinary team.
Roles & Responsibilities
- Support the Head Chef in the daily management and operation of the kitchens.
- Prepare dishes in line with established recipes and cooking standards.
- Train, mentor, and guide Chef de Parties, Commis Chefs, and Kitchen Assistants.
- Set up and organise workstations efficiently to ensure smooth service.
- Ensure full compliance with HACCP procedures and hygiene standards.
- Support ongoing training and development initiatives within the kitchen team.
- Maintain the highest standards of cleanliness, safety, and food quality.
- Contribute creatively to seasonal menu planning while respecting the resort’s culinary ethos.
Candidate Requirements
- Relevant third-level culinary qualification.
- Previous experience in a Sous Chef role within a high-volume, fine-dining or luxury hospitality environment.
- Excellent attention to detail and commitment to delivering the highest culinary standards.
- HACCP Level 2 certification or equivalent.
- Strong leadership, coaching, and communication skills.
- Hands-on, proactive approach to kitchen operations.
- Passion for seasonal, locally sourced ingredients and innovative cuisine.
- Legal right to live and work in Ireland, with a valid work permit of at least 12 months if applicable.
