Overview
A prestigious 4-star historic hotel in County Kildare is seeking an experienced Chef de Partie to join its culinary team. This full-time role involves assisting the Head Chef and Sous Chef in delivering high-quality food preparation, production, and service across all hotel outlets, maintaining strict food hygiene and safety standards. The ideal candidate will be highly organised, skilled in culinary techniques, and committed to excellence in every dish served.
Roles & Responsibilities
- Prepare food for all hotel outlets, including breads, pastries, and menu-specific dishes for lunch and dinner services.
- Manage the day-to-day operations of your assigned kitchen section efficiently.
- Ensure compliance with HACCP standards and proper food hygiene practices.
- Control costs and maintain quality for incoming and outgoing goods.
- Conduct proper stock rotation and accurately monitor temperature readings daily.
- Maintain kitchen equipment, fixtures, and fittings in good working order and ensure safe usage.
- Adhere to cleaning schedules, personal hygiene standards, and grooming requirements.
- Participate in training, maintain a tidy and safe work area, and comply with Health & Safety regulations.
Candidate Requirements
- Minimum 4 years’ experience as a Chef de Partie in a professional kitchen.
- Strong knowledge of food preparation, production, and service standards.
- Understanding of HACCP and food safety regulations.
- Ability to manage and maintain high-quality kitchen operations.
- Excellent teamwork, communication, and organisational skills.
- Flexibility to work full-time, with reliability to commute or relocate to Co. Kildare.
