Overview
Achieve Hospitality are delighted to be recruiting for a Sous Chef on behalf of a prestigious luxury country house hotel in Cumbria. This is an exciting opportunity to join an award-winning kitchen, supporting an accomplished Head Chef in delivering exceptional dining experiences within a renowned fine dining restaurant. The successful candidate will play a key role in leading the brigade, maintaining the highest culinary standards and contributing to the continued success of this exceptional property.
As Sous Chef, you will work closely with the Head Chef to oversee the day-to-day running of the kitchen, ensuring consistently outstanding food quality, smooth service and effective leadership of the brigade. You will help develop junior chefs, maintain exceptional standards and contribute to the ongoing evolution of the menu.
Role & Responsibilities
- Support the Head Chef with the day-to-day management of kitchen operations.
- Lead and motivate the kitchen brigade, ensuring exceptional standards during preparation and service.
- Maintain consistency, quality and presentation across every dish served.
- Train, mentor and develop junior chefs to support their progression.
- Monitor stock levels, ordering, stock rotation and minimise waste.
- Ensure all food hygiene, HACCP and health & safety standards are consistently met.
- Assist with menu development, seasonal dishes and new ideas.
- Step into the Head Chef’s role when required, ensuring seamless kitchen operations.
Candidate Requirements
- Previous experience as a Sous Chef or a strong Junior Sous Chef within a high-quality kitchen.
- Experience working in a Michelin-starred and/or AA Rosette environment is highly desirable.
- Strong leadership skills with experience managing and developing kitchen teams.
- Excellent knowledge of fine dining techniques, food safety and allergen management.
- Ability to remain calm and organised in a fast-paced service environment.
- Strong understanding of stock control, ordering and kitchen cost management.
- Passion for exceptional food, creativity and continuous improvement.
- Excellent communication skills with a positive, hands-on approach.
