Overview
We are seeking a talented and passionate Sous Chef to join a boutique 4-star hotel in County Kerry, set in beautiful grounds and known for delivering exceptional hospitality experiences. The successful candidate will report to the Head Chef and play a key role in maintaining the smooth operation of the kitchen, ensuring food quality, presentation, and hygiene standards are consistently met.
Roles & Responsibilities
- Manage the day-to-day running of the kitchen in the Head Chef’s absence.
- Oversee food preparation, ensuring dishes meet menu specifications and quality standards.
- Implement and maintain HACCP and food safety procedures across all kitchen areas.
- Monitor stock, manage orders, and ensure correct storage and rotation of goods.
- Train and supervise kitchen staff and porters on equipment and procedures.
- Prepare weekly rosters and ensure overtime is recorded accurately.
- Control kitchen costs while maintaining high-quality food production.
- Support large events, banquets, and special functions with planning and execution.
Candidate Requirements
- Proven experience in high-standard kitchens, preferably 4-star or above.
- Strong knowledge of HACCP, food safety, and kitchen hygiene.
- Excellent team leadership and staff training skills.
- Ability to manage stock, ordering, and kitchen costs effectively.
- Fluent English and eligible to work in Ireland.
- Passion for food, attention to detail, and high standards of presentation.
