Role: Head Chef

Salary: £40,000 – £45,000
Work Type: 48 hours per week
Overview
We’re working with a highly regarded, independent pub group in Hertfordshire known for its ingredient-led cooking, hyper-seasonal menus, and uncompromising kitchen standards. This is a genuine scratch-cooking environment, everything is made in-house, driven by provenance, technique, and a team that takes real pride in the craft.
With a flagship site already established as a destination for serious food, and further growth underway, they are now looking for a Head Chef to lead one of their key kitchens. This is an opportunity to shape menus, develop a high-performing team, and be part of a group building something ambitious, creative, and long-term.
Role & Responsibilities
- Lead, inspire, and develop a brigade in a high-standard, fresh-food kitchen
- Design and deliver seasonal, ingredient-focused menus with creative input
- Maintain exceptional food quality, consistency, and presentation standards
- Build strong relationships with suppliers, focusing on quality and provenance
- Take full ownership of kitchen operations, including stock, GP, and labour control
- Drive a positive, professional, and ambitious kitchen culture
- Ensure compliance with all food safety, hygiene, and health & safety standards
- Collaborate with senior leadership on ongoing menu and business development
Candidate Requirements
- Proven experience as a Head Chef or strong Senior Sous ready to step up
- Background in fresh, seasonal cooking (rosette or Michelin-level experience desirable)
- Strong leadership skills with a passion for team development and training
- Commercially aware with experience managing costs and driving profitability
- Creative, detail-oriented, and committed to high standards
- Passion for hospitality and delivering exceptional guest experiences
